The craftsmanship of Mengzi cross-bridge rice noodles was inscribed on China’s fourth batch of national intangible cultural heritage lists in 2014, marking official recognition of its cultural value.
Traditional manual production once restricted the industry’s development, with low daily output and unstable product quality. Modern technological upgrades have thoroughly overhauled the production model. Intelligent temperature control systems precisely manage rice soaking conditions, while digital grinding machines standardise rice slurry fineness. The streamlined production process covers more than ten rigorous procedures including soaking, grinding, fermentation and pressing. The new product fills market gaps in pre-packaged fresh rice noodles and has secured long-term supply partnerships with major supermarket chains.
Broth serves as the core essence of cross-bridge rice noodles. Local producers adopt central kitchen and cold chain systems to maintain consistent flavour nationwide. Premium broth is slowly simmered with old hens and pork bones for over six hours before rapid freezing for freshness preservation. Cold chain transportation delivers the standardised broth across the country, ensuring every franchised store serves the authentic original taste of Mengzi.
Fresh chrysanthemums, the signature garnish of the delicacy, also form a supporting local industry. Local floral enterprises adopt an integrated operational model combining companies, planting bases, cooperatives and farmers. The chrysanthemum planting scale has expanded from a few mu to hundreds of mu, yielding more than 6,000 fresh flowers daily. The products supply local restaurants and nationwide outlets, generating an annual output value of over 3 million yuan and stabilising employment for more than 100 local residents.
Standardised brand promotion drives the industry’s nationwide expansion. Local characteristic industry authorities formulate unified operational standards covering broth boiling, ingredient matching and table setting, and provide professional training for authorised stores. Registered franchise outlets feature unified brand signage. Up to now, Mengzi cross-bridge rice noodles have 1,052 authorised stores nationwide, including eight overseas outlets.
While preserving traditional flavours, Mengzi continues to enrich product diversity with innovative tastes and catering styles, launching chrysanthemum, lotus, chicken custard and dendrobium flavours as well as over one hundred new catering formats. The full industrial chain covering intelligent production, standardized ingredient planting, cold chain logistics and brand authorization has fostered a robust local industry with an annual output value of 4.5 billion yuan. The sector now comprises 28 rice noodle manufacturers, over 3,000 catering operators and more than 30,000 practitioners, turning a traditional street snack into a distinctive cultural business card for Mengzi.
